Healthy Oatmeal Blueberry Muffins
For a different, wholesome homemade breakfast, try these muffins! I tweaked the recipe to be a little healthier. Nate gave them a double thumbs up!
Ingredients:
3/4 cup oatmeal flour
3/4 cup quick or old fashioned oatmeal
1 cup unsweetened almond milk (or skim milk/water mix)
1/2 cup brown sugar, packed
2 tbsp sugar equivalent (Stevia, etc)
1/2 cup unsweetened applesauce (or oil)
2 egg whites
1 tbsp oil (Not needed if you used oil vs.applesauce above)
1 tsp vanilla extract
1/2 cup white whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup fresh blueberries
Directions:
Preheat oven to 400°. Line a muffin tin with liners or lightly spray with oil.
Soak oats and oat flour in milk for ~30 minutes. If you don’t have oat flour, pulse oats in a food processor.
In a medium bowl combine brown sugar, sugar substitute, apple sauce, vanilla, egg whites, oil (if needed) and mix well.
Add whole wheat flour, salt, baking powder, baking soda and whisk to combine.
Combine oats mixture and wet ingredients. Fold in blueberries.
Spoon into the muffin tin and bake for 18-22 minutes (if oven is at 400° when you put in the batter – longer if it’s not at full temp) . Enjoy!!
